Evaluation of qualitative and quantitative methods for detection of NaOH in milk

Abstract:
The aim of this study is to achieve a quick and simple method to detect quantitative and qualitative added soda to milk even in small quantities. Because the existing tests methods are not applied in practical and real terms. For this purpose, after determining the microbiological and chemical characteristics samples of raw milk are divided into 4 parts and different values of lactic acid was added to each part, then different rates of soda was added to the samples. Tests for acidity, pH, electrical conductivity, alcohol, ash and Rozalic acid were performed. According to the results with increasing the amount of soda, the electrical conductivity and total ash was increased and the acidity was decreased. There was no significant correlation between the interest added to the samples and pH. Alcohol tests had the same results on all samples. Rozalic acid test was negative in all samples. In the case of alkaline ash in none of the samples the volume of hydrochloric acid consumed reached to 2.1 ml. According to the results, Rozalic acid test did not work. Alkaline ash test did not specify the small amounts of soda. Only the electrical conductivity test showed the positive and credible results that can be used to detect and quantify the added soda of it.
