Application of ultrasonic pretreatment in extraction of oil from Sesame (Sesamum indicum L.) seeds and its physicochemical characteristics

Among the sources of oil, sesame with the scientific name Sesamum Indicum L. is oldest oilseed that known by humans. This oilseed is a very high nutritional value and medicinal and is considered a rich source of protein and good fats. The aim of this study is to investigate the effect of time and frequency ultrasonic pretreatment for oil extraction from sesame with solvent extraction on yield and the physicochemical properties of oil extracted. Statistical analyses of the data were made using SPSS package program, version 19.0. Differences between means were determined by Duncan’s multiple range test at a level of 0.05. In this study, effectiveness of ultrasonic-assisted extraction of sesame seed oil was evaluated using a variety of time and frequency of ultrasonic. According to results of this research, ultrasound treatments can reduced the refractive index (up to 6.5%), acidity (up to 36.8%) and peroxide value (up to 9.72%) and increase of efficiency extracted oil (up to 5.84%) samples but had no significant effect on density (0.915±0.001). The study showed that ultrasonic pretreatment for 90 minutes with a frequency of 130 kHz, without changing on the oil structure of the fatty acids, increasing the yield extraction.
