New Applications of Edible Packaging for Fresh Fruits and Vegetables and their Capabilities as Carriers for Active Agents

Abstract:
Fresh fruits and vegetables form an essential part of a healthy diet. Maintaining fresh fruits and vegetables with high quality for long periods of time is complicated. In recent years, research groups have recognized edible packaging as a suitable alternative to conventional packaging methods. In this review article, edible films and coatings and their new applications as edible packaging for fresh fruits and vegetables are investigated. Also, this article discusses the capabilities of edible films and coatings as carriers for active agents. Incorporation of some additives or active agents such as antimicrobial agents, texture enhancers, anti - browning agents, coloring agents, flavor enhancers, antioxidants and nutrients to edible films and coatings can improve the microbial stability and preserve sensorial quality and nutritional value of coated fruits and vegetables.
