Background
Vitamin C and kombucha contain a high amount of glucuronic acid that can prevent cholesterol accumulation and convert cholesterol to a more water-soluble compound.
ObjectivesThe aim of this study was to compare the effects of kombucha and vitamin C on the coronary arteries and aorta of male rabbits exposed to lead acetate fed with a high-cholesterol diet.
MethodsForty male rabbits were divided randomly into four groups of 10 animals. Group 1 served as a control group. Rabbits in group 2 received water containing 547 ppm of lead acetate and a high-cholesterol diet (1%). Group 3 received water containing 547 ppm lead acetate and a high-cholesterol diet (1%) in combination with ascorbic acid (500 mg/kg), and group 4 rabbits were treated with water containing 547 ppm lead acetate and kombucha extract (10 ml/kg) for 40 days orally on a high-cholesterol diet (1%).
ResultsThe results showed that in groups 3 and 4, no significant atherosclerotic plaques could be detected in coronary arteries, compared to the control animals. However, large atherosclerotic plaques were observed in the aortas of those treated only with kombucha. The data were analyzed using analysis of variance (ANOVA) statistical methods. The mean ± standard error of the mean (SEM) triglyceride (TG) serum levels in groups 1, 2, 3, and 4 were 122.70 ± 66.77, 280.60 ± 88.66, 120.10 ± 8.33, and 107.86 ± 8.61 mg/dL, respectively. The mean ± SEM TG serum levels in groups 1, 2, 3, and 4 were 67.80 ± 10.33, 67.90 ± 10.10, 60.80 ± 8.16, and 58.71 ± 4.78 mg/dL, respectively. The mean ± SEM TG serum levels in groups 1, 2, 3, and 4 were 194.50 ± 6.58, 182.60 ± 13.75, 178.30 ± 18.01, and 166.00 ± 7.65 mg/dL, respectively. P-values for low-density lipoprotein (LDL), high-density lipoprotein (HDL), and TG were reported as P < 0.001, P = 0.077, and P < 0.001, respectively.
ConclusionsIt could be concluded that kombucha, unlike vitamin C, cannot prevent the formation of large plaques in the aorta, although it seems that it can prevent atherosclerotic lesions in coronary arteries. Therefore, further studies are required to evaluate the long-term use of kombucha to assess whether higher doses are beneficial in preventing atherosclerotic events or not.

Background
This study aimed to evaluate microbial counts of beverage samples fermented using kombucha, including total acetic acid bacteria (AAB), total lactic acid bacteria (LAB), yeasts, and total microbial count (TMC).
MethodsA fermented orange beverage was produced using yogurt whey at three different concentrations (0 %, 10 %, and 20 % v/v) and kombucha at four different concentrations (1 %, 2 %, 3 %, and 4 % w/v) as the starter culture. Next, the microbial counts of the produced samples were evaluated at the end of the incubation and during cold storage at 4 ℃. The results were expressed as log CFU/mL.
ResultsThe results indicated a significant increase in the viability of AAB, TMC, and yeasts with increasing yogurt whey concentrations in the samples (p < 0.05). Furthermore, increasing the kombucha percentage in beverage samples resulted in the viability increment of TMC, AAB, LAB, and yeasts. Over time, the number of yeasts and viability of LAB increased in the samples. Moreover, the viability of TMC and AAB increased in the samples from days 7 to 10 and decreased from days 10 to 14 (p < 0.05).
ConclusionIncreasing yogurt whey and kombucha percentages affect microbial counts of beverage samples fermented using kombucha.

مقدمه
بیماری دیابت با تغییرات هورمونی و بیوشیمیایی همراه بوده و با تولید رادیکال های آزاد، نقش مهمی در پیدایش بسیاری از آسیب های متابولیسمی ایفا می نماید. گیاه سیر و قارچ کامبوجا به دلیل خواص آنتی اکسیدانی نقش عمده ای در پیشگری و درمان عوارض ناشی از استرس های اکسیداتیو اعمال می نمایند. مطالعه حاضر با هدف بررسی اثر عصاره قارچ کامبوجا و سیر بر روی پارامترهای بیوشیمیایی خون موش های صحرایی سالم و دیابتی انجام شد.
روش ها40 سر موش صحرایی نر نژاد ویستار، به 5 گروه 8 تایی شامل: گروه کنترل، گروه کنترل منفی(شاهد) (دیابتی، با mg/kg 55 استرپتوزوتوسین به صورت درون صفاقی)، گروه تجربی 1 (دیابتی + mg/kg 50 عصاره سیر) تجربی 2 (دیابتی + 50 mg/kg قارچ کامبوجا) و گروه تجربی3 (دیابتی + mg/kg 50 قارچ کامبوجا و mg/kg 50 عصاره سیر) تقسیم شدند. بعد گذشت دو ماه از دیابتی شدن موش ها عصاره ها به صورت زیر جلدی به مدت 2 هفته تزریق شد. بعد از آن موش ها با کتامین و زایلیزین بیهوش شده و خونگیری مستقیم از قلب انجام شد.
یافته هاگروه کنترل منفی(شاهد) نسبت به گروه کنترل دارای گلوکز، تری گلیسرید، کلسترول و LDL بالاتر و انسولین و HDL پایین تر بود. گروه های درمانی موجب کاهش معنی داری در سطح گلوکز، کلسترل، تری گلیسیرید و LDL و افزایش معنی دار HDL و انسولین نسبت به گروه کنترل منفی(شاهد) شد (05/0> P). بیشترین اثر درمانی را گروه سیر + کامبوجا نشان داد.
نتیجه گیریعصاره ترکیبی کامبوجا و سیر اثرات مطلوبی بر کنترل قند و کاهش کلسترول و تری گلیسیرید دارد.

Garlic plant and kombucha mushroom play a major role in the prevention and treatment of complications caused by oxidative stress due to their antioxidant and anti-apoptotic properties.
Methods40 male Wistar rats, divided into five groups of eight, including: control (diabetic and receiving citrate buffer), Negative control group (diabetic, with 55 mg/kg of streptozotocin intraperitoneally), experimental group 1 (diabetic and receiving 50 mg/kg garlic extract), experimental group 2 (diabetic and receiving 50 mg/kg kombucha mushroom) and experimental group 3 (diabetic and receiving 50 mg/kg kombucha mushroom and 50 mg/kg of garlic extract) were divided. After two months passed after the mice became diabetic, the extracts were injected subcutaneously for two weeks. After that, the rats were anesthetized with ketamine and xylisine, and blood was taken directly from the heart.
ResultsThe Negative control group had higher glucose, triglyceride, cholesterol and LDL and lower insulin and HDL than the control group. The treatment groups of garlic, kombucha and garlic + kombucha caused a significant decrease in glucose, cholesterol, triglyceride and LDL levels and a significant increase in HDL and insulin compared to the Negative control group (p < 0.05). The highest therapeutic effect was shown by the garlic + kombuja group.
ConclusionThe combined extract of kombucha and garlic has favorable effects on sugar control and reducing cholesterol and Triglyceride.

مقدمه
کامبوچا یک نوشیدنی تقریبا ترش مزه و حاصل از تخمیر چای و شکر توسط نوعی مخمر به همراه باکتری است. گاها برخی از تولیدکننده ها به این نوشیدنی طعم دهنده نیز اضافه می کنند.این نوشیدنی به شکل طبیعی کمی گازدار است و سرشار از پروبیوتیک ها، آنتی اکسیدان ها، ویتامین های گروه ب و سایر مواد مغذی دیگر است.
مواد و روشدر این تحقیق تاثیر چای کامبوچا مخلوط شده با شیر تخمیری در غلظتهای مختلف بر قابلیت زنده مانی سویه های لاکتوباسیلوس اسیدوفیلوس، بیفیدوباکتریوم بیفیدیوم و لاکتوباسیلوس رامنوسوس و خواص فیزیکوشیمیایی و حسی شیر تخمیری در طول 28 روز نگهداری در دمای1± 5درجه سانتیگراد مورد بررسی قرار گرفت. پس از کشت باکتریهای پروبیوتیک مقدار cfu/ml 107 از آن ها به شیر پاستوریزه اضافه گردید. سپس چای کامبوچا در سطوح 0، 5، 10، 15 و 20 میلی لیتر در لیتر به مخلوط اضافه و در روزهای سوم، هفتم، چهاردهم و بیست و هشتم نگهداری در دمای 1± 5 درجه سانتیگراد آزمونهای تعیین میزان پروتیین، اسیدیته، pH، اسید استیک، درصد ترکیبات آنتی اکسیدانی و میزان بقای باکتریها برروی نمونه ها انجام شد.
یافته هانتایج نشان داد درصد پروتیین، اسیدیته، اسید استیک و فعالیت آنتی اکسیدانی با افزایش میزان کامبوچای در طول دوره نگهداری به طور میانگین به ترتیب 12/0، 02/0، 694/15و 16/0افزایش اما میزان pH و جمعیت باکتریهای پروبیوتیک به طور معنی داری p<0.05 به ترتیب به میزان 79/0 و 046/0 سیکل لگاریتمی کاهش یافت. در طی دوره نگهداری میزان زنده مانی باکتری های پروبیوتیک به طور معنی داری کاهش یافت ولی بالاتر از حد استاندارد قابل قبول محصولات پروبیوتیک بود.
نتیجه گیرییافته های این تحقیق نشان داد افزودن کامبوچای در سطح 5 درصد تیمار T1 در بهبود ویژگیهای حسی تخمیری نقش موثری داشته و به عنوان تیمار برتر انتخاب شد.

Material and Methodsthe effect of different concentrations of kombucha drink on the viability of Lactobacillus acidophilus, bifidobacterium bifidum, Lactobacillus Rhamnosus was studied and physicochemical and sensory characteristics of fermented milk were measured during 28 days of storing period at 5±1˚C. Different levels of Kombucha tea 0, 5, 10, 15 and 20 ml/L were added to probiotic fermented milk containing L. acidophilus, B. bifidum, L. Rhamnosus bacteria (Cfu/ml 107) .Viability rate of probiotic bacteria, pH, percentages of protein, acidity(Dornic), acetic acid, antioxidant compounds were measured during 3, 7, 14 and 28th of storing period at 4 ⸰C.
ResultsResults showed that higher amounts of kombucha cause higher content of protein, acidity, acetic acid and antioxidant activity. The average amounts of theses parameters were respectivly 0.12,0.02, 15.694 and 0.16. however, pH and viability of probiotic bacteria significantly decreased during the storage period(p<0.05) and average amounts of these parameters were respectively0.79 and 0.046, However, the mentioned indices were higher than the acceptable standard of probiotic products.
Conclusionthe addition of kombucha up to 5% could be more effective in improving sensory characteristics. Hence, a treatment containing 5% of kambucha was selected as the best among others.

BACKGROUND
Colorectal cancer is the third leading to death type of cancer in the world. The therapeutic guideline varied between different methods. As the main therapeutic guideline is chemotherapy, recent studies had shown utilization of natural products in combination with conventional medication, elevate the efficiency of chemotherapeutic methods. Kombucha is a traditional beverage obtained from the fermentation of green tea as a rich source of flavonoid medicinal plant. This study aimed to evaluate the natural potential of combination therapy of this natural product with doxorubicin as a chemotherapeutic agent.
MATERIALS AND METHODSThe study was performed as in vitro evaluation of biological activity of kombucha on HCT‑116 cell line (human colon cancer cell line). The cytotoxic effect of different kombucha beverages (fermented green tea) in comparison with green tea extract was evaluated by dimethylthiazolyl tetrazolium bromide (MTT) assay. In the next step, anticancer activity of doxorubicin as a general guideline chemotherapeutic agent in combination with kombucha was evaluated by cell cycle analysis and apoptosis assay flow cytometry. Apoptotic genes expression pattern was determined using real‑time polymerase chain reaction. The experiments were designed in three independent replications and statistically analyzed using SPSS software.
RESULTSThe results show that kombucha compared with the green tea extract caused more (1.2 fold) early apoptosis induction and G0/G1 phase arrest. Moreover, kombucha increased the expression levels of p21, p53, and B‑cell leukemia/lymphoma 2 (Bcl‑2)‑associated X protein genes (2, 2.5, and 1.5 fold, respectively) while it decreased Bcl‑2 gene expression level (5–8 fold) compared with doxorubicin alone. Combination of kombucha with doxorubicin shows 2‑fold increased G0/G1 phase compared with the doxorubicin treatment.
CONCLUSIONThis result indicated that kombucha caused boosted anticancer activity of doxorubicin agent. These findings suggest that kombucha may be has an assistor and useful role in colorectal cancer treatment align with chemotherapy.

محبوبیت نوشیدنی های تخمیری به دلیل حفظ ارزش مواد غذایی و ویژگی های سلامتی بخش محصول در حین تخمیر به شدت در حال افزایش است. کامبوچا یک نوشیدنی تخمیری پروبیوتیک و فراسودمند است که از همزیستی اجتماعی از باکتری ها و مخمرهای اسموفیلیک در محیط چای سیاه شیرین شده با ساکارز حاصل می شود. ساکارز توسط آنزیم اینورتاز تولید شده به وسیله ی مخمرهای موجود در کنسرسیوم کامبوچا به گلوکز و فروکتوز هیدرولیز شده و فروکتوز بوسیله مخمرها به اتانول و دی اکسید کربن تبدیل می شود. با وجود خواص سلامتی بخش فوق العاده این نوشیدنی، ممکن است گاهی اوقات نوشیدن آن به دلیل افزایش سطح اتانول و مسئله حلال بودن بحث برانگیز باشد.
نتایجغلظت نهایی الکل اتانول در کامبوچا بسته به پارامترهایی مانند نوع میکروارگانیسم های موجود در محلول، دما، زمان تخمیر و میزان شکر مصرفی اولیه متغیر است. با استفاده از تدابیری مانند کنترل میزان ساکارز مصرفی، هوادهی منظم در حین فرآیند تخمیر، استفاده از چای سبز و سیاه به عنوان سوبسترا، استفاده از گونه هایی خاص از میکروارگانیسم ها برای کاهش میزان اتانول تولیدی، کاهش pH محلول در حین فرآیند و استفاده از منابع جایگزین ساکارز با درصد شیرینی کمتر مانند عسل و شیره توت، می توان میزان اتانول تولید شده در کامبوچا را تا 5/0 درصد پایین آورد.
نتیجه گیریکامبوچا با میزان الکل زیر 3 درصد جزء نوشیدنی های غیرالکلی محسوب می شود. با استفاده از راهکارهای ساده و قابل اجرا می توان میزان اتانول تولیدی در محلول کامبوچا را به میزان قابل ملاحظه ای کاهش داد و از خواص معجزه آسای این نوشیدنی بهره مند شد.

Kombucha is a probiotic and beneficial fermented beverage obtained from the social coexistence of bacteria and osmophilic yeasts in a sweetened black tea environment with sucrose. Sucrose is hydrolyzed to glucose and fructose by the invertase enzyme produced by the yeasts in the Kombucha consortium, and fructose is converted to ethanol and carbon dioxide by the yeasts. Despite the excellent health benefits of this drink, it can sometimes be controversial due to the increase in ethanol levels and the issue of halal quality.
ResultsThe final concentration of ethanol alcohol in kombucha varies depending on parameters such as the species of microorganisms present in the solution, temperature, fermentation time and the initial sugar consumption. Using measurements such as controlling the amount of consumed sucrose, regular aeration during the fermentation process, using green and black tea as a substrate, using certain species of microorganisms to reduce the amount of ethanol produced, reducing the pH of the solution during the process and using Alternative sources of sucrose with lower sweetness such as honey and berry juice, can reduce the amount of ethanol produced in kombucha by 0.5%.
ConclusionKombucha with an alcohol content of less than 3% is considered a non-alcoholic beverage. Using simple and practical solutions, the amount of ethanol produced in the Kombucha solution can be significantly reduced and the miraculous properties of this drink can be benefited.

Background and Purpose
Aspergillus fumigatus is one of the most common opportunistic fungus, which causes infection in immunocompromised and neutropenic patients. The current guidelines recommend voriconazole as the initial therapeutic and prophylactic agent for almost all cases, especially in patients with organ transplants, which leads to increased medication resistance in A. fumigatus. The aim of the present study was to evaluate the antifungal activity and effect of kombucha as a natural compound on A. fumigatus growth, as well as on the expression of cgrA and cyp51A genes.
Materials and MethodsA panel of 15 A. fumigatus strains with two quality controls of CM237 and CM2627 as susceptible and resistant strains were obtained from Tehran Medical Mycology Laboratory, Tehran,Iran(TMML).Antifungal susceptibility testing assay was performed according to the Clinical and Laboratory Standards Institute (CLSI) M38-A2 document. Moreover, the mycelial dry weight of the fungus was calculated before and after being treated with kombucha. In addition, the quantitative changes in the expression of cgrA and cyp51A genes were analyzed by real-time polymerase chain reaction (real-time PCR) technique.
ResultsIn the present study, the minimum inhibitory concentration ranges of kombucha were measured at 6,170 and 12,300 μg/mL for ten A. fumigatus azole-susceptible strains and 24,700 μg/mL for five A. fumigatus resistant strains. Moreover, changes in mycelial dry weight under kombucha treatment conditions underwent a significant reduction (P≤0.05). A coordinate down-regulation of expression in cgrA and cyp51A genes was observed in all azole-susceptible and -resistant A. fumigatus strains, after treating the fungus with different concentrations of kombucha (P≤0.05).
ConclusionAccording to the obtained results, kombucha as a natural antioxidant , can exert inhibitory effects against the growth and expression of some genes in A. fumigatusstrains.

The use of silver as an antibacterial goes back to ancient times. Adding a small number of silver nanoparticles to different surfaces can cause the antimicrobial coating. Use at high doses has toxic effects, which can alter cell morphology, increase oxidative stress, increase membrane permeability, decrease cell growth, and ultimately cause cell death through apoptosis or necrosis. In this study, we evaluated the antioxidant effect of kombucha beverage in mice treated with silver nanoparticles. The amount of SOD, CAT, MAD, and GST enzymes were evaluated in four groups include control groups, silver nanoparticles treated, Cambodian beverage treatment, and Nano + kombucha treated. The results showed an increase in oxidative stress after treatment with silver nanoparticles. It has also demonstrated that kombucha drinks can have a protective role and reduce the oxidative stress induced by silver nanoparticles. Background And AimsKombucha is an ancient food and healing source with Asian origin. Kombucha consists of a wide range of acids, including vitamin C, organic materials, enzymes, and B-group vitamins, which has provided it with immense value. This study was aimed to investigate the effects of Kombucha tea consumption on hepatic UDPGT enzyme in mice.MethodsIn this experimental study, 21 small male albino mice and CD-1 genus were used. Albino mice species were purchased from serum Institute in Karaj Hisarak. Mice with a weight between 18 to 25 g were selected. Animals were kept in triplex group in polycarbonate cages. Animal rooms were equipped with air-conditioner. Ambient temperature was retained at about 22°C, and humidity 50%. A light cycle was set at 12 hours brightness and 12 hours darkness. The intensive diet was used that produced by animal Pars feeds for mice feeding. Finally, UDPGA enzyme was measured.ResultsConsumption of kombucha tea for seven days of experiment caused a significant increase in enzyme activity in mice liver UDPGT compared to the negative control group, from the first day until the seventh day of experiment.ConclusionKombucha tea induced the UDPGT enzyme; thus, it accelerated the detoxification of the body and should be cautioned about simultaneous administration of this beverage with some drugs (such as steroids, acetaminophen, cardio– vascular medicine, etc.) that they metabolize through conjugation. Medical community in this case must be justified and their opinion must be considered when people are using this tea. Finally, kombucha tea consumption did not increase the liver weight. مقدمه
دیابت، بیماری مزمن و پیشرونده ای است که اختلالات چربی یکی از مشکلات متداول در این بیماری است که خود سبب پیدایش و تشدید عوارض کوتاه و بلند مدت می شود.
هدفمطالعه حاضر اثر کمبوچای تهیه شده از چای سبز بر روی سطح گلوکز و پروفایل لیپیدی موش های صحرایی دیابتی را مورد بررسی قرار داد.
روش بررسیتعداد 30 سر موش صحرایی از نژاد ویستار که به وسیله تزریق آلوکسان با دوز 130 میلی گرم بر کیلوگرم دیابتی شده بودند به طور تصادفی به 3 گروه شامل: 1) گروه کنترل، 2) گروه دریافت کننده چای سبز 3) گروه دریافت کننده کمبوچای تهیه شده از چای سبز تقسیم شدند. به گروه شماره 2 چای سبز دم کرده، به گروه 3 کمبوچای تهیه شده از چای سبز و به گروه کنترل آب به میزان 5 میلی لیتر بر کیلوگرم روزانه در مدت 4 هفته گاواژ شد، سپس میزان گلوکز و پروفایل لیپیدی اندازه گیری شد.
نتایجسطح گلوکز سرم در گروه های کمبوچا و چای سبز نسبت به گروه کنترل کاهش معنی دار داشت (به ترتیب 002/0p= و 0001/0p=). کمبوچای در مقایسه با چای سبز باعث کاهش معنی دار گلوکز شد (050/0=p). همچنین افزایش میانگین غلظت HDL در گروه کمبوچا در مقایسه با گروه چای سبز معنی دار بود (02/0=p) و کاهش میانگین غلظت کلسترول تام و LDL در گروه های کمبوچا و چای سبز نسبت به گروه کنترل معنی دار بود. در ضمن کاهش میانگین غلظت توتال کلسترول و LDL در گروه کمبوچا در مقایسه با گروه چای سبز نیز معنی دار بود (0001/0=p).
نتیجه گیریمصرف کمبوچای باعث کاهش غلظت گلوکز، LDL، کلسترول تام و افزایش HDL سرم شد که احتمالا این اثرات به علت ترکیبات حاصل از فرایند تخمیر می باشد.

ObjectiveThis study was aimed to examine effect of Kombucha prepared from green tea on blood glucose and lipid profile in diabetic rats.
MethodsIn the present study, 30 alloxan-induced diabetic wistar rats randomly divided in to three groups: 1) control group, 2) diabetic group receiving green tea and 3) diabetic group receiving Kombucha prepared from green tea. Experimental diabetes in rats was induced by intraperitoneal injection of Aloxan (130 mg/kg). The animals of groupsgreen tea and Kombucha received respectively green tea and Kombucha (made from green tea) and group1 received water 5 ml/kg by oral gavage daily for four weeks. Then glucose and lipid profile were measured.
ResultsCompared to control group, Serum glucose levels in groups green tea and kombucha were significantly reduced (respectively p=0.002 and p=0.0001). Compared with green tea, Kambocha decreased glucose significantly (p=0.050). Increasing concentrations of HDL in kombucha group in comparison with green tea group was significant (p=0.02) and reduction of total cholesterol and LDL concentration in groups kombucha and green tea in comparison with control group was significant. Meanwhile, decreased average total cholesterol and LDL concentration in kombucha group in comparison with grean tea group was also significan (respectively p= 0.0001 and p =0. 0001).
ConclusionUse of Kombucha caused a decrease in serum glucose, LDL, total cholesterol and an increase in HDL cholesterolthat this effects are probably because of fermentation process products.

مقدمه
نتایج مثبتی از چای قارچ کومبوجا، که یک نوشیدنی سنتی آسیایی است، بر روی فرآیند التیام زخم مشاهده شده است.
هدفهدف از این مطالعه بررسی اثرات مصرف خوراکی چای قارچ کومبوجا بر روی تعداد ماست سلهای بستر زخم موش بود.
مواد و روش هاتحقیق به روش تجربی صورت پذیرفت. 42 سر موش صحرایی نر بالغ بصورت تصادفی در دسته های شاهد و تجربی قرار گرفتند. هر دسته به سه گروه کوچکتر با دوره های بررسی 4، 7 و 15 روزه که معرف فازهای التهاب، تکثیر و تجدید ساختار فرآیند التیام زخم بود تقسیم شدند. موشهای صحرایی ابتدا به مدت سی روز از چای قارچ کومبوجا مصرف کردند. سپس تحت بیهوشی عمومی و با رعایت شرایط استریل یک زخم با ضخامت کامل پوست در پشت هر موش صحرایی ایجاد شد. روز ایجاد زخم روز صفر محسوب شد. موشهای صحرایی دسته تجربی همچنان چای قارچ کومبوجا مصرف می کردند. در روزهای 4، 7 و 15 موشهای صحرایی به وسیله اتر کشته شده، نمونه بافتی از آنها تهیه شده، مراحل کار عملی بافت شناسی بر روی آنها به عمل آمده، مقاطع با محلول آبی تولوییدین بلو %1 رنگ شده و ماست سلها و درجات 1 و 2 و 3 (بر حسب وضعیت دگرانولاسیون) آنها شمارش شدند. یافته ها با روش Student t test تجزیه و تحلیل آماری شدند.
یافته هانتایج اصلی عبارت بودند از: 1. وقوع سیر کاهشی تعداد کل ماست سلهای گروه تجربی در روزهای 7 و 15 بررسی که اختلاف آنها با گروه شاهد در روز پانزده بررسی از نظر آماری هم معنی دار بود (P<0.01).2. در اکثر موارد تعداد ماست سلهای گروه تجربی کمتر از گروه شاهد شد و در سه مورد هم این اختلافات از نظر آماری معنی دار شد: در روز چهار بررسی ماست سلهای درجه یک، در روز پانزده بررسی ماست سلهای درجه دو (P<0.05) و مجموع درجات دو و سه (P<0.01).
نتیجه گیریمصرف روزانه چای قارچ کومبوجا به وسیله موشهای صحرایی موجب وقوع سیر کاهشی تعداد ماست سلها طی فرآیند التیام زخم پوستی شد که اختلاف آنها با گروه شاهد در فاز تجدید ساختار از نظر آماری هم معنی دار شد.

ObjectiveTo study its effects on the number of mast cells of wound bed.
Materials and MethodsThe study design was experimental. 42 male adult rats were randomly divided into control and experimental groups. Each group was divided into 3 subgroups. The time of study of first subgroups were 4 days (Represents inflammation phase of wound healing process), of second subgroups were 7 days (Proliferation phase) and of third subgroups were 15 days (Remodeling phase) after wounding. Both groups drank Kombucha tea for 30 days. Then under general anesthesia and sterile conditions, a full thickness wound was made on the dorsum of all rats. The wounding day was considered as day zero. Rats of experimental group drank Kombucha tea after surgery until they were killed by ether at the end of above-mentioned durations. Samples were obtained from rats and prepared for light microscopical study and stained with 1% watery solution of toluidine blue. Mast cells and its grades (According to it’s degranulations) were counted. Data were analyzed by students t test method.
ResultsMain results were: 1) Total number of most cells of experimental group decreased from 7th day toward 15th day and on 15th day, the difference with control group was significant (P<0.01); 2) In most cases the numbers of mast cells of experimental group were lower than control group and the difference were significant for the 4th day grade 1, 15th day grade 2 (P<0.05) and total number of grades 2 and 3 (P<0.01).
ConclusionDaily consumption of Kombucha tea by rats caused a decreased number of mast cells during skin wound healing and the difference with control group at remodeling phase was significant.
