    سابقه و هدف

    با توجه به شیوع بالای دیابت نوع 2 و زمینه ساز بودن چاقی در ایجاد اختلالات متابولیک و بیماری های قلبی- عروقی، مطالعه حاضر با هدف بررسی تاثیر نشاسته مقاوم بر عوامل خطر کاردیومتابولیک، آنزیم های کبدی و هموستاز کلسیم در بیماران مبتلا به دیابت نوع 2 چاق طراحی گردیده است.

    مواد و روش ها

    در این کارآزمایی بالینی، 70 بیمار دیابتی نوع 2 به طور تصادفی به دو گروه تقسیم شدند. افراد گروه آزمون روزانه 10 گرم نشاسته مقاوم و افراد گروه شاهد، روزانه 10 گرم مالتودکسترین به مدت 3 ماه دریافت کردند.  شاخص های تن سنجی، ترکیب بدن، فشارخون، لیپیدهای سرم، هموستاز کلسیم، آنزیم های کبدی در ابتدا و انتهای مطالعه اندازه گیری شد. برای مقایسه پارامترهای کمی قبل مداخله مابین دو گروه، از آزمون t مستقل و برای بعد مداخله، از تحلیل کوواریانس(ANCOVA)  استفاده شد.

    یافته ها 

    مکمل یاری با نشاسته مقاوم منجر به تغییرات معنی دار در غلظت کلسترول تام (96/16%-)، تری گلیسیرید (85/16%-)، کلسترول با دانسیته پایین (90/14 %-) نسبت کلسترول تام به کلسترول با دانسیته بالا (91/25% -)، نسبت کلسترول با دانسیته پایین به کلسترول با دانسیته بالا (00/26%-)، نمایه آتروژنیک پلاسما (85/17%-)) hs-CRP03/53%-)، آلکالین فسفاتاز (74/13%-)، آلانین آمینوترانسفراز (98/10%-)، کلسیم (99/6%) درگروه نشاسته مقاوم در مقایسه با گروه دارونما گردید. کاهش در نسبت دور کمر به دور باسن و فشارخون دیاستولیک، گلوکز، آسپارتات آمینوترانسفراز، فسفر، کراتینین و اسید اوریک و افزایش در غلظت کلسترول با دانسیته بالا در گروه نشاسته مقاوم در مقایسه با گروه دارونما غیرمعنی دار بود.

    نتیجه گیری

    پری بیوتیک نشاسته مقاوم ممکن است با تعدیل عوامل خطر کاردیومتابولیک، آنزیم های کبدی و هموستاز کلسیم در بیماران دیابتی چاقی به کنترل اختلالات متابولیک این بیماری و عوارض ناشی از آن کمک نماید.

    سابقه و هدف

    سرطان پستان اولین سرطان شایع در بین زنان ایرانی می باشد که در سال های اخیر میزان شیوع و مرگ و میر ناشی از آن افزایش یافته است. مطالعات پیشین نشان داده اند که مواد مغذی مختلف می تواند با عود مجدد این سرطان در ارتباط باشند. این مطالعه با

    هدف بررسی

     ارتباط فروکتوز، سوکروز، فیبر محلول و نامحلول با سطح سرمی لپتین و نوروپپتید Y NPY (neuropeptide Y) در بهبودیافتگان سرطان پستان BCS (Breast cancer survivors) در شهر تهران انجام شد.

    مواد و روش ها

    در این مطالعه مقطعی، 145 زن بهبود یافته از سرطان پستان (در محدوده سنی 70-18 سال) انتخاب گردیدند. اطلاعات
     عمومی، فعالیت بدنی و دریافت غذایی به ترتیب توسط پرسشنامه اطلاعات عمومی، پرسشنامه 14 آیتمی MET و پرسشنامه بسامد غذایی FFQ (Food Frequency Questionnair) ارزیابی شدند. نمونه خون پس از 12 ساعت ناشتایی از تمامی شرکت کنندگان گرفته شد و غلظت لپتین و NPY سرم با روش ایمنی سنجی تعیین گردید.

    یافته ها 

    زنانی که در بالاترین سهک سطح سرمی لپتین قرار داشتند، به طور معنی داری وزن (003/0p=)، نمایه توده بدنی (BMI) (000/0p=)، دورکمر(005/0p=)، درصد توده چربی بدن (000/0p=) و چربی احشایی (000/0p=) بیشتر و در مقابل قد (02/0p=) و توده عضلانی (008/0p=) کمتری داشتند. بعد از تعدیل اثر مخدوشگرها دریافت سوکروز، فروکتوز، فیبر محلول و فیبر نامحلول با غلظت سرمی لپتین و NPY ارتباط معنی داری نداشت.

    نتیجه گیری

    در زنان بهبود یافته از سرطان پستان مصرف سوکروز ، فروکتوز ، فیبر محلول و فیبر نامحلول با سطوح سرمی هورمون های لپتین و NPY ارتباط معنی داری نداشت.

    سابقه و هدف

    کبد چرب غیر الکلی (NAFLD)، به عنوان شایع ترین بیمای مزمن کبدی، دارای شیوع بیش از 30 درصدی در ایران است. با پیشرفت NAFLD، خطر پیشرفت این بیماری و ابتلا به فیبروز، سیروز و هپاتوکارسینوما افزایش می یابد. به دلیل عدم وجود درمان قطعی برای NAFLD، آمار مبتلایان به این بیماری در حال افزایش است. از این رو نگرش‏ های جدید درمانی مبتنی بر درمان های متابولیک و  اصلاح سبک زندگی در این بیماری گسترش یافته است. رژیم کتوژنیک بر پایه اسیدهای چرب متوسط زنجیره می تواند گزینه مناسبی برای این منظور باشد. در این مطالعه، برای نخستین بار، اسید دکانوییک (C10) به رژیم غذایی مدل حیوانی NAFLD  اضافه شد و تاثیرات پیش‏گیرانه و درمانی این مداخله مورد بررسی قرار گرفت.

    مواد و روش ها

    مدل کبد چرب غیر الکلی با استفاده از جیره پرچرب در موش‏های صحرایی القا شد. ترکیب اثر C10 در دو گروه پیش‏گیری و درمان بر روی حیوانات ارزیابی شد. هر گروه شامل سه زیر گروه کنترل سالم، جیره پرچرب و C10 بود. میزان C10 در رژیم غذایی به میزان 35 درصد از انرژی روزانه تنظیم گردید. پس اتمام دوره القا رژیم تیمار با C10 ابتدا بافت کبد با روش H&E جهت بررسی استیاتوز کبدی رنگ آمیزی و سپس پارامترهای سرمی  با یکدیگر مقایسه شدند.

    یافته ها

    به طور خلاصه بررسی های بافتی و بیوشیمایی نشان دادند که اثر مداخله گر منجر به کاهش تجمعات چربی در بافت کبد و بهبود پارامترهای سرمی شاخص در بیماری کبد چرب غیرالکلی شده است.

    نتیجه گیری

    یافته های این پژوهش نشان داد که استفاده از C10  در غالب یک رژیم کتوژنیک می تواند باعث بهبود پارامترهای سرمی و مهار پیشرفت تجمعات لیپیدی در بافت کبد بیمار و کاهش آنها شود.

    سابقه و هدف

    ناکارآمدی میتوکندریایی یکی از سازوکارهای احتمالی پیدایش و پیشرفت دیابت می باشد. بنابراین هدف از پژوهش حاضر بررسی تاثیر هم افزایی تمرین استقامتی به همراه مکمل یاری پروبیوتیک بر بیان ژن PGC-1α و سیترات سنتاز (CS) در رت های دیابتی می باشد.

    مواد و روش ها

    32 سر رت نر نژاد ویستار به صورت تصادفی به پنج گروه: کنترل-سالم (NC)، کنترل-دیابتی (DC)، مکمل-دیابتی (SDC)، تمرین-دیابتی (TD)، مکمل-تمرین-دیابتی (STD) تقسیم شدند. پروتکل تمرینی با شدت 60 تا 65 درصد vVO2peak، پنج روز در هفته در طی چهار هفته اجرا شد. همزمان رت ها روزانه دو گرم پروبیوتیک محلول در 30 میلی لیتر آب مصرف نمودند. بیان ژن PGC-1α و CS به روش qReal-TimePCR اندازه گیری شد. تجزیه و تحلیل داده ها با آزمون آنالیز واریانس دوطرفه در سطح معنی داری 05/0≥p انجام شد.

    یافته ها

    بیان ژن PGC-1α در گروه های TD (006/0=P) و STD (000/0=P) نسبت به گروه DC افزایش معنی داری داشت. همچنین بیان ژن CS در گروه های TD (03/0=P) و STD (00/0=P) نسبت به DC افزایش معنی داری داشت، اما بین دو گروه TD و STD در بیان ژن PGC-1α (06/0=P) و CS (27/0=P) تفاوت معنی داری مشاهده نشد. همچنین اثر متقابل و همزمان دو عامل تمرین هوازی و مکمل پروبیوتیک بر بیان ژن PGC-1α (25/0=P) وCS  (46/0=P) مشاهده نشد.

    نتیجه گیری

    اگرچه چهار هفته تمرین استقامتی به تنهایی و در ترکیب با پروبیوتیک منجر به افزایش بیان ژن PGC-1α و CS گردید، با این حال به نظر می رسد این افزایش ناشی از تمرینات استقامتی بوده و مصرف همزمان پروبیوتیک تجویز شده با تمرین استقامتی دارای تاثیر هم افزایی و تعاملی نبود.

    سابقه و هدف

    بروز سرطان در دوران جنینی بسیار نادر است. با این حال، هنوز عواملی که مانع ایجاد و یا باعث کنترل روند تومورزایی در محیط جنینی شوند به درستی شناسایی نشده اند. از سوی دیگر، سلول های بنیادی تومور، با ویژگی هایی مشابه سلول های بنیادی جنینی، در پیشرفت و مقاومت به درمان سرطان دخالت دارند. هدف از این مطالعه بررسی اثر سفیده تخم مرغ نابارور، به عنوان یک محیط شبه جنینی، بر خصوصیات تکثیر، آپوپتوز، خودنوزایی، بنیادینگی و قدرت مهاجرت سلول های سرطانی کولون رده SW480 و زیرگروهی مقاوم به داروی 5-فلورواوراسیل (5FU) است.

    مواد و روش ها

    سلول های SW480 و5FU-SW480 ، با غلظت 10% حجمی سفیده تخم مرغ نابارور تیمار شدند. میزان زنده مانی سلول ها با روش MTT، بررسی سیکل سلولی با فلوسایتومتری، خودنوزایی با روش تشکیل کولونی و تشکیل اسفرویید و مهاجرت سلولی با روش ترمیم زخم سنجیده شدند. همچنین، بیان ژن های c-Myc، Nanog، Ndrg1 و E-cadherin  با روش Real time-PCR بررسی شد.

    یافته ها

    سفیده تخم مرغ باعث کاهش میزان بقا، توقف سیکل سلولی در فاز G0/G1، کاهش تشکیل کولونی و اسفرویید و مهار مهاجرت در هر دو گروه سلولی در مقایسه با گروه کنترل شد. همچنین در سلول های SW480 منجر به کاهش بیان ژن c-Myc و Nanog و افزایش بیان ژن های Ndrg1 و E-cadherin شد. در حالی که، افزایش بیان ژن c-Myc، کاهش بیان ژن Nanog و Ndrg1 در سلول های مقاوم به دارو مشاهده شد.

    نتیجه گیری

    به نظر می رسد سفیده تخم مرغ نابارور از طریق مکانیسم های متفاوتی باعث جلوگیری و یا کنترل روند تومورزایی می شود. مطالعات بیشتری نیاز است تا دقیقا عواملی که به صورت خاص بر بنیادینگی و تهاجم پذیری سلول های سرطانی به خصوص در سلول های بنیادی سرطانی موثرند، را شناسایی کند.

    سابقه و هدف

    با آگاهی عموم مردم از مضرات مصرف زیاد اسیدهای چرب اشباع و ترانس، و نیز اهمیت دریافت اسیدهای چرب ضروری از طریق رژیم غذایی، تمایل به مصرف محصولات سالم تر روز به روز در حال افزایش است. کاهش چربی جامد و نیز چربی کل، خصوصیات محصول نهایی را تحت تاثیر قرار می دهد. هدف از این پژوهش، تعیین ویژگی های فیزیکی-شیمیایی، ریولوژیکی و حسی ژل امولسیونی کم چرب غنی از اسیدهای چرب ضروری امگا-3 به عنوان محصولی مالش پذیر و جایگزین سالم تری برای کره و مارگارین بود.

    مواد و روش ها

    در این مطالعه ژل امولسیونی به روش افزودن فاز آبی حاوی هیدروکلوییدها (صمغ دانه خرنوب، کاراگینان، زانتان و مالتودکسترین) و افزودنی ها (اسید سیتریک، سوربات پتاسیم و نمک) به فاز روغنی حاوی روغن بزرک (منبع غنی از اسیدهای چرب ضروری امگا-3) و امولسیفایرها (منوآسیل گلیسرول و پلی گلیسرول پلی ریسینولیات) و هم زدن با دور بالا تهیه شد. در طول مدت 60 روز نگهداری، ترکیب اسیدهای چرب، پایداری اکسیداسیونی، ویژگی های ریولوژیکی، گرماسنجی روبشی تفاضلی و ریزساختار ارزیابی شد. ویژگی های حسی ژل امولسیونی به عنوان جایگزینی برای کره و مارگارین توسط آزمون حسی ارزیابی شد.

    یافته ها 

    ژل امولسیونی تهیه شده با 19% روغن بزرک، 1% امولسیفایر،  05/0% صمغ دانه خرنوب، 2% کاراگینان،  4/1% کاراگینان و 5% مالتودکسترین دارای پایداری اکسیداسیونی و حرارتی مطلوب، ویژگی جامد مانند، رقیق شونده با برش و تیکسوتروپیک بود. با وجود اینکه قطرات پراکنده روغن در انتهای دوره نگهداری شروع به ادغام کرده بودند؛ پیشرفت پدیده تا حدی نبود که موجب ناپایداری و جدا شدن فاز روغنی شود. ویژگی های حسی توسط ارزیاب ها، مطلوب گزارش شد.

    نتیجه گیری

    ژل امولسیونی تولید شده با استفاده از هیدروکلوییدهای محلول در آب و روغن بزرک با داشتن چربی کل و اسیدهای چرب اشباع کمتر، می تواند به عنوان جایگزینی سالم تر برای کره و مارگارین و نیز حاملی برای انتقال اسیدهای چرب ضروری امگا-3 به کار برده شود.

    سابقه و هدف

    با توجه به تمایل به فیلم های بسته بندی زیست تخریب پذیر و افزایش قابلیت ضدمیکروبی آنها در سال های اخیر، این مطالعه با هدف بررسی قابلیت به کارگیری بتاگلوکان جهت تولید فیلم ضدمیکروبی حاوی عصاره میوه درخت بلوط، انجام گرفت.

    مواد و روش ها

    در این مطالعه ویژگی های فیزیکی، مکانیکی، نوری و آنتی اکسیدانی فیلم بتاگلوکان حاوی غلظت های مختلف 1 ، 2 و 4 درصد عصاره میوه درخت بلوط بررسی شد. همچنین اثر ضدمیکروبی فیلم های تهیه شده بر چهار باکتری بیماری زا بررسی شد.

    یافته ها

    نتایج نشان داد که در اثر افزودن عصاره میوه درخت بلوط ضخامت فیلم ها افزایش و میزان نفوذپذیری به بخار آب آنها کاهش معنی داری داشت. فیلم های حاصله در اثر افزودن عصاره، انعطاف پذیری بیشتری را از خود نشان دادند در حالی که مقاومت آنها به شکست کاهش معنی داری نشان داد. حلالیت فیلم ها با افزایش مقدار عصاره افزوده شده، کاهش معنی داری نشان داد. افزودن عصاره موجب افزایش معنی دار رنگ قرمز فیلم ها و کاهش معنی دار روشنی و زردی رنگ آن ها شد. فعالیت آنتی اکسیدانی فیلم های ترکیب شده با عصاره افزایش معنی درای را نشان داد. فیلم های حاوی عصاره میوه درخت بلوط به طور معنی داری (05/0p<) از رشد میکروارگانیسم های بیماری زا جلوگیری کردند.

    نتیجه گیری

    عصاره میوه درخت بلوط به عنوان یک عامل ضدباکتری طبیعی دارای پتانسیل استفاده در فیلم به منظور بسته بندی گستره ی وسیعی از فرآورده های غذایی، به ویژه مواد غذایی حساس به اکسیژن، می باشد.

    سابقه و هدف

    با توجه به اهمیت استفاده از فرآورده های جانبی صنعت غذا، از سبوس گندم به دلیل این که منبعی سرشار از فیبر، مواد معدنی و ویتامین می باشد، می توان به عنوان یک محصول جانبی با ارزش، در این صنعت استفاده کرد. با این حال بر خلاف ارزش تغذیه ای بالای سبوس گندم، وجود اسید فیتیک به دلیل جلوگیری از دسترسی زیستی بسیاری از املاح معدنی یک عامل نگرانی می باشد.

    مواد و روش ها

    در ادامه پژوهش هایی که با هدف کاهش میزان اسید فیتیک انجام شده است، تاثیر فرایند تکمیلی اکستروژن بر کاهش اسید فیتیک سبوس گندم تیمار شده به روش های هیدروترمال و تخمیری مورد بررسی قرار گرفت. جهت تهیه نمونه های اکسترود شده از دستگاه اکسترودر دو مارپیچی با چرخش غیر هم جهت و سرعت چرخش مارپیچ (300 دور بر دقیقه)، سرعت ورود خوراک 20 کیلوگرم بر ساعت، رطوبت 20% و دمای 120 درجه سانتی گراد استفاده گردید.

    یافته ها 

    فرایند اکستروژن سبب کاهش میزان اسید فیتیک در سبوس خام، تخمیری و هیدروترمال، در سطح معنی دار گردید (05/0p<). به ترتیب بیشترین کاهش میزان اسیدفیتیک پس از اکستروژن، (84/84 %) در سبوس تخمیر شده و (3/78%) سبوس هیدروترمال و (46%) سبوس خام دیده شد. همچنین، فرایند اکستروژن سبب کاهش رطوبت، pH و روشنی (L*)، و افزایش معنی دار میزان خاکستر، فیبر خام و میزان قرمزی (a*)، در سه نمونه سبوس خام، تخمیری و هیدروترمال گردید (05/0p<).

    نتیجه گیری

    نتایج نشان داد که سبوس گندم تخمیری و هیدروترمال که تحت فرایند تکمیلی اکستروژن قرار گرفتند، به عنوان منبع غنی از فیبر رژیمی، مقدار کمتر اسید فیتیک و زیست دسترس پذیری بیشتر به مواد معدنی و ماندگاری بیشتر، دارای پتانسیل بالقوه مناسبی برای استفاده در فرمولاسیون های غذایی می باشد.

    با توجه به نبود مطالعه ای در مورد اثرات ضد میکروبی پوشش های خوراکی حاوی ماده موثره های تیمول و اوژنول در مدل مواد غذایی، هدف از این مطالعه بررسی تاثیر پوشش کیتوزان حاوی تیمول و اوژنول بر کنترل پاتوژن های لیستریا مونوسیتوژنز و  اشرشیاکلیO157:H7 در فیله گوشت مرغ نگهداری شده در دمای یخچال بود.

    مواد و روش ها

    در این مطالعه، فعالیت ضد میکروبی تیمول و اوژنول  علیه برخی پاتوژن های غذایی با استفاده از متدهای میکرودایلوشن و دیسک دیفیوژن و اثر ترکیبی آن ها در شرایط آزمایشگاهی با استفاده از روش چکر بورد و هم چنین اثر پوشش کیتوزان حاوی تیمول و اوژنول بر مهار رشد اشریشیاکلی O157:H7 و مخلوط سویه های مختلف باکتری های لیستریا مونوسیتوژنز و تلقیح شده به مدل غذایی (فیله گوشت مرغ) در طول دوره نگهداری در دمای یخچال و شمارش آنها در روزهای 0، 4، 8 و 12 مورد ارزیابی قرار گرفت.

    یافته ها

    نتایج نشان داد که حداقل غلظت بازدارندگی تیمول روی باکتری های لیستریا مونوسیتوژنز و اشریشیاکلیO157:H7  به ترتیب 3/0 و  6/0 میلی گرم/ میلی لیتر و حداقل غلظت مهارکنندگی اوژنول بر باکتری های لیستریا مونوسیتوژنز و اشریشیاکلی O157:H7  به ترتیب 6/0 و 25/1 میلی گرم /میلی لیتر بود. ارزیابی ترکیب هم زمان تیمول و اوژنول، فعالیت سینرژیستی آن ها را روی باکتری های مورد مطالعه نشان داد. میانگین تعداد باکتری های تلقیح شده در گوشت مرغ پوشش داده شده با کیتوزان حاوی هریک از مواد موثره و حالت ترکیبی آن ها در طول دوره 12روزه کاهش معنی داری داشت (05/0P<).

    نتیجه گیری

    با توجه به اثرات ضد میکروبی خوب تیمول و اوژنول هر کدام به تنهایی و در ترکیب با هم، پوشش کیتوزان غنی شده با این دو ترکیب می تواند در جلوگیری از رشد پاتوژن های سطح مواد غذایی و به ویژه گوشت مرغ کاربرد داشته و مورد استفاده صنایع غذایی قرار گیرد.

    سابقه و هدف

    این مطالعه با هدف بررسی میزان شیوع کوکسیلا بورنتی در نمونه های شیر گاو، گوسفند و بز به روش واکنش زنجیره ای پلیمراز (PCR) در استان مازندران صورت پذیرفت.

    از بهار 1397 تا زمستان 1397 در مجموع تعداد 200 نمونه شیر خام گاو، گوسفند و بز به طور تصادفی از استان مازندران جمع آوری شد که با استفاده از روش PCR با استفاده از دو نوع پرایمر مختلف از نظر کوکسیلا بورنتی مورد آزمایش قرار گرفتند.

    یافته ها 

    در این مطالعه، هدف بررسی میزان شیوع کوکسیلا بورنتی به روش واکنش زنجیره ای پلیمراز با مقایسه دو نوع پرایمر انجام شد. با استفاده از پرایمر Trans، مجموع تعداد 19 نمونه به ترتیب 17نمونه (52/17درصد) شیرگوسفند و 2 نمونه (70/2 درصد) شیر گاو از نظر آلودگی به کوکسیلا بورنتی مثبت بودند و هیچ یک از نمونه های شیر بز مثبت تشخیص داده نشد. همچنین با استفاده از پرایمر OMP هیچ یک از نمونه ها مثبت تشخیص داده نشد و نتایج نشان داد که پرایمر Trans از توان بیشتری برای تشخیص کوکسیلا بورنتی برخوردار است. میزان شیوع باکتری کوکسیلا بورنتی در فصول پاییز و زمستان از سایر فصول بیشتر بود (05/0P<). بیشترین فراوانی نمونه های مثبت مربوط به شهرستان جویبار با تعداد 8 (67/66 درصد) نمونه و کمترین فراوانی مربوط به شهرستان محمود آباد با تعداد 1 (11/11درصد) نمونه بود. تعداد نمونه های مثبت با پرایمر Trans در واحد سنتی 16 (60/8 درصد) نمونه و در واحد نیمه صنعتی 2 (20درصد) نمونه بود. این درحالی است که در واحدهای صنعتی هیچ نمونه مثبتی یافت نشد. هم چنین تعداد نمونه های مثبت با پرایمر Trans از شیر مخزن، 12 (90/12 درصد) و تعداد 7 (55/6 درصد) نمونه مثبت، به صورت تکی از هر دام بوده است.

    نتیجه گیری

    نتایج حاصل از این مطالعه نشان داد که روش Trans-PCR از توان بیشتری برای تشخیص آلودگی به کوکسیلا بورنتی برخوردار است. شیوع کوکسیلا بورنتی در فصول مختلف متفاوت است به طوری که شیوع باکتری کوکسیلا بورنتی در فصول پاییز و زمستان از سایر فصول بیشتر مشاهده شد. جهت کنترل و پیشگیری، انجام مطالعات بیشتر در مورد اپیدمیولوژی و اثرات ناشی از حضور کوکسیلا بورنتی در شیر خام و شیوع تب کیو ضروری است.

    سابقه و هدف

    گوشت قرمز به دلیل وجود مواد مغذی و رطوبت بالا همواره مستعد انواع فسادهای میکربی و شیمیایی است. هدف از این پژوهش بررسی اثر پوشش خوراکی مبتنی بر موسیلاژ دانه بارهنگ کاردی و اسانس مینای نیشابوری بر خواص فیزیکوشیمیایی، میکربی و حسی نمونه های گوشت گوساله طی دوره نگهداری در دمای یخچال (4 درجه سلسیوس) می باشد.

    مواد و روش ها

    از غلظت های صفر، 5/0، 1 و 5/1 درصد اسانس مینای نیشابوری در پوشش موسیلاژ دانه بارهنگ کاردی استفاده گردید. میزان تغییرات بار میکربی (شمارش کلی، باکتری های سرمادوست، اشرشیا کلی، استافیلوکوکوس اوریوس و قارچ ها) خواص فیزیکوشیمیایی (pH، رطوبت، عدد پراکسید، تیوباربیتوریک اسید و بافت) و ارزیابی حسی (رنگ، بو و پذیرش کلی) نمونه های گوشت در روزهای صفر، 2، 4 و 6 بررسی شد.

    یافته ها

    با افزایش غلظت اسانس در نمونه های پوشش دهی شده عدد پراکسید، تیوباربیوتیک اسید، بارمیکربی کل، باکتری های سرمادوست، اشرشیا کلی، استافیلوکوکوس اوریوس و قارچ ها نسبت به نمونه کنترل با شیب ملایم تری افزایش یافتند. با گذشت زمان میزان سفتی، رطوبت و ویژگی های حسی (رنگ، بو و پذیرش کلی) تمامی نمونه ها کاهش یافت اما این روند در نمونه های پوشش داده شده حاوی اسانس نسبت به نمونه کنترل کم تر بود. براساس بار میکربی کل میزان ماندگاری نمونه های کنترل، نمونه های پوشش دهی شده توسط بارهنگ کاردی (فاقد اسانس) و حاوی غلظت 5/0، 1 و 5/1 درصد اسانس به ترتیب 2، 4، 4، 6 و 6 روز بود.

    نتیجه گیری

    پوشش خوراکی موسیلاژ دانه بارهنگ کاردی در تمامی غلظت های اسانس مینای نیشابوری موجب افزایش عمر نگهداری نمونه های گوشت گوساله نسبت به نمونه کنترل گردید.

    طی دهه اخیر مصرف لبنیات در خانوارهای ایرانی روند کاهشی داشته است و به حدود 164 گرم در روز رسیده است که با پیشنهادات"سبد غذایی مطلوب برای جامعه ایرانی" مبنی بر مصرف روزانه 250 گرم لبنیات فاصله بسیار زیادی دارد. طیفی از عوامل مختلف از جمله فراهم بودن مواد غذایی، دسترسی به مواد غذایی و انتخاب های غذایی بر مصرف شیر و لبنیات تاثیرگذارند و این عوامل به نوبه خود از سیاست های اتخاذ شده در بخش های تولید، فراوری، عرضه و مصرف لبنیات تاثیر می پذیرند. در این مطالعه که به روش جست و جوی دامنه انجام پذیرفته است، سیاست های تولید، فراوری و عرضه و مصرف شیر و لبنیات با استفاده از کلید واژه های مناسب مورد جستجو قرار گرفت. سیاست های جانب تولیدکننده در پنج دسته ی سیاست ها و ابزارهای مدیریت ریسک شامل ابزارهای سیاستی حمایتی غیر قیمتی و قیمتی، کاهش هزینه ی سرمایه و نهاده، حمایت از قیمت بازار داخلی، پرداخت های مستقیم به کشاورزان و بهبود محیط کسب و کار برای کشاورزی طبقه بندی گردید. همچنین سیاست های جانب مصرف کننده نیز در پنج دسته سیاست های تاثیرگذار بر قیمت، برنامه های کمک غذایی، تهیه و ارایه غذا، برنامه های ترویجی مصرف غذا و برچسب گذاری غذایی طبقه بندی شد و اثربخشی هر یک از سیاست ها بر اساس مطالعات موجود مورد بررسی قرار گرفت. سپس با توجه به مشکلات شناسایی شده و اثر بخشی سیاست های مختلف و یافته های مطالعات، مجموعه سیاست های تاثیرگذار بر بهبود سرانه مصرف شیر و لبنیات در ایران پیشنهاد گردید.

    Background and Objectives

    Considering high prevalence of type 2 diabetes and predisposition of obesity to metabolic disorders and cardiovascular diseases, the aim of the present study was to investigate effects of starch resistance on cardiometabolic factors, liver enzymes and calcium homeostasis in obese patients with type 2 diabetes.

     Materials & Methods

    In this clinical trial, 70 obese patients with type 2 diabetes were assigned to one of the two major groups. The experimental group received 10g/d resistant starch and the control group received 10 g/d maltodextrins for three months. Anthropometric measurements, body composition, blood pressure, hs-CRP, serum lipids, calcium homeostasis and liver enzymes were assessed at the baseline and end of the study. Unpaired sample Student’s t test and analysis of covariance were used to compare the quantitative variables between the groups.

    Results

    Supplementation with resistant starch led to significant changes in total cholesterol (TC) (- 16.96%), triglyceride (TG) (-16.85%), low density lipoprotein cholesterol (LDL-c) (-14.90%), TC/HDL-c ratio (-25.91%), LDL-c/HDL-c ratio (-26.00%), plasma atherogenic index (-17.85%), hsCRP (-53.03%), alkaline phosphatase concentration (-13.74%), calcium (6.99%) and alanine aminotransferase (-10.98%) in resistant starch group, compared to maltodextrin group (p < 0.05). Decreases in waist to hip ratio, diastolic blood pressure, glucose, aspartate aminotransferase, phosphorus, creatinine and uric acid and increases in high density lipoprotein chelestrol (HDL-c) were not significant in resistant starch group, compared to maltodextrin group.

    Conclusion

    Possibly, resistant starch prebiotics help control of metabolic disorders of type 2 diabetes and its complications via modulating cardiometabolic risk factors, liver enzymes and calcium homeostasis in obese type 2 diabetics.

    Background and Objectives

    Breast cancer is the most common cancer within the Iranian women, which its prevalence and mortality have increased in recent years. Previous studies have shown that various nutrients can affect breast cancer recurrence. The aim of this study was to investigate relationships between fructose, sucrose and soluble and insoluble fibers and serum levels of leptin and neuropeptide Y in breast cancer survivors in Tehran, Iran.

     Materials & Methods

    In this cross-sectional study, 145 female breast cancer survivors (age group of 18–70 years) were selected. General information, physical activity and food intake were assessed using general information questionnaire, MET 14-item questionnaire and food frequency questionnaire, respectively. Blood samples were collected from participants after 12 h of fasting and serum leptin and neuropeptide Y concentrations were assessed using immunoassay.

    Results

    The highest tertile of leptin was linked to high weight (p = 0.003), body mass index (p = 0.000), waist circumference (p = 0.005), fat mass percentage (p = 0.000) and visceral fat (p = 0.000). In contrast, patients in this tertile included lower height (p = 0.02) and muscle mass (p = 0.008). After modulating effects of confounders, no significant relationships were reported between sucrose, fructose and soluble and insoluble fibers with serum leptin and neuropeptide Y concentrations.

    Conclusion

    Consumption of sucrose, fructose and soluble and insoluble fibers was not significantly associated to serum levels of leptin and neuropeptide Y in breast cancer survivors.

    Background and Objectives

    Non-alcoholic fatty liver disease (NAFLD) is one of the most challenging chronic liver diseases with more than 30% of prevalence in Iran. Non-alcoholic fatty liver disease has emerged as a significant challenge because of its prevalence, difficulties in diagnosis, complex pathogenesis and lack of approved therapies. The more non-alcoholic fatty liver disease develops, the higher the risk of fibrosis, cirrhosis and hepatocarcinoma. Lack of approved therapies has led to increased infliction with the diseases. Hence, novel therapeutic approaches based on metabolic therapies and lifestyle modifications have been developed for this disease. A ketogenic diet based on medium-chain fatty acids can be a good option for this purpose. In this study, decanoic acid (C10) was added to diet of the non-alcoholic fatty liver disease animal models and the preventive and therapeutic effects of this intervention were investigated for the first time.

     Materials & Methods

    The non-alcoholic fatty liver disease model was induced using high-fat diet in rats. Effects of C10 on the two prevention and treatment groups were assessed. Each group included three subgroups of normal diet (ND), high fat (HF) and C10. The C10 was set to include 35% of daily energy in the diet. After completing 10C induction period, liver tissues were stained with H&E to initially assess liver steatosis. Then, rat serum parameters were compared with each other.

    Results

    Texture and biochemical analyses showed that C10 intervention decreased lipid accumulation in livers and improved dominant serum parameters.

    Conclusion

    Findings of this study have shown that using C10 in the form of ketogenic diet can improve serum parameters and inhibit or decrease the progression of lipid accumulations in liver tissues.

    Background and Objectives

    Mitochondrial dysfunction is one of the probable mechanisms for the onset and progression of diabetes. Therefore, the aim of the present study was to investigate synergistic effects of endurance training with probiotic supplementation on PGC-1α and citrate synthase (CS) gene expression in diabetic rats.

     Materials & Methods

    Briefly, 32 Wistar male rats were randomly divided into five groups of normal control (NC), diabetic control (DC), diabetic supplement (SDC), diabetic training (TD), and diabetic supplement training (STD). The training protocol was carried out with 60–65% vVO2peak intensity, five days a week for four weeks. Furthermore, rats daily received 2 g of probiotic dissolved in 30 ml of water. The PGC-1α and CS gene expression were assessed using the quantitative real-time polymerase chain reaction method. Data were analyzed using two-way analysis of variance at significant levels of p ≤ 0.05.

    Results

    Expression of the PGC-1α gene significantly increased in TD (p = 0.006) and STD (p = 0.000) groups, compared to DC. The CS gene expression significantly increased in TD (p = 0.03) and STD (p = 0.00) groups, compared to DC. No significant differences were seen between the TD and STD groups in PGC-1α (p = 0.06) and CS (p = 0.27) gene expression. Moreover, no synergistic effects of aerobic exercise and probiotic supplement on the expression of PGC-1α (p = 0.25) and CS (p = 0.46) genes were observed.

    Conclusion

    Although four weeks of endurance training alone and in combination with probiotics increased the expression of PGC-1α and CS genes; however, this increase seems to be due to endurance training and concomitant use of the prescribed probiotics with endurance training did not include synergistic and interactive effects.

    Background and Objectives

    Embryonic cancers are very rare. However, the exact components preventing cancer development or progression in embryonic microenvironment are largely unknown. On the other hand, cancer stem cells with characteristics similar to embryonic stem cells are involved in cancer progression and resistance to treatment. The aim of this study was to investigate effects of unfertilized egg white, as an embryonic microenvironment model, on proliferation, self-renewal, stemness and migration of SW480 colon cancer cells and 5-fluorouracil (5FU) resistant subgroup.

     Materials & Methods

    In brief, SW480 and 5FU-SW480 cells were exposed to 10% (v/v) egg white. To assess viability, self-renewal and stemness characteristics and migratory capacity of the colon cancer cells, MTT, flow PI staining and flow cytometry, colony formation, spheroid and wound healing assays were used, respectively. Furthermore, expression levels of c-Myc, Nanog, Ndrg1 and E-cadherin genes were quantified using real-time polymerase chain reaction.

    Results

    Findings showed that 10% volume of unfertilized egg white significantly decreased cell survival, inhibited cell cycle in G0/G1, decreased colony formation and sphere formation and inhibited migration ability in the two cell groups, compared to the control. Moreover, expression of c-Myc and Nanog decreased while expression of Ndrg1 and E-cadherin increased in SW480 cells. However, c-Myc gene expression increased in 5FU-SW480 with decreases in expression of Nanog and Ndrg1.

    Conclusion

    It seems that unfertilized egg white includes various mechanisms to control cancer development and progression. Further studies are needed to identify actual components affecting stemness and invasiveness of tumor cells, specifically cancer stem cells.

    Background and Objectives

    With public awareness of the dangers of consuming too much saturated and Trans fatty acids, as well as the importance of taking essential fatty acids through the diet, consumption of healthier products increases. It is noteworthy that decreases of solid fats as well as total fat affect characteristics of the final products. The aim of this study was to assess the physicochemical, rheological and sensory characteristics of low-fat emulsion gels rich in omega-3 essential fatty acids as spread and healthier alternatives to butter and margarine.

     Materials & Methods

    In this study, emulsion gels were prepared using Locust bean gum, carrageenan, xanthan and maltodextrin and flaxseed oil as a rich source of omega-3 essential fatty acids. During 60 days of storage, fatty acid composition, oxidation stability, rheological characteristics, differential scanning calorimetry and microstructure were investigated. Sensory attributes of the emulsion gels as substitutes for butter and margarine were evaluated using sensory analysis.

    Results

    Emulsion gels included acceptable oxidative and thermal stability, solid-like attribute, shear thinning and thixotropic. Although the dispersed oil droplets coalesced at the end of the storage, the phenomenon did not continue since it caused instability and separation of the oil phase. Sensory attributes were reported as desirable.

    Conclusion

    Prepared emulsion gels using water-soluble hydrocolloids and flaxseed oil containing lower total fat and saturated fatty acids can be used as healthier alternatives to butter and margarine as well as carriers for omega-3 essential fatty acids.

    Background and Objectives

    In recent years, studies have focused on biodegradable packaging films and increase of their antimicrobial ability. Therefore, this study was carried out to investigate usability of beta-glucan to produce antimicrobial films incorporated with extracts of oak trees.

     Materials & Methods

    In this study, physical, mechanical, optical and antioxidant characteristics of β-glucan based films incorporated by 1, 2 and 4% of oak tree extracts were investigated. Moreover, antimicrobial effects of the prepared films on four pathogens were studied.

    Results

    Results showed that by addition of oak tree extracts, film thickness and water permeability rate significantly increased and decreased, respectively. Prepared films were more flexible, while their elongation in breaks significantly decreased. Film solubility decreased with increases in quantity of the added extracts. Addition of oak tree extracts increased redness and decreased lightness and yellowness parameters. Films incorporated with the extracts showed significant increases in antioxidant characteristics. Prepared films significantly (p < 0.05) inhibited the bacterial growth.

    Conclusion

    Oak tree extracts as natural antibacterial inhibitors include good potentials to incorporate into films of packaging to extend food shelf-life, in particular the oxygen sensible foods.

    Background and Objectives

    Wheat bran is a rich source of fibers, minerals and vitamins, which can be used as a valuable byproduct in food industries. However, despite the high nutritional value of wheat bran, presence of phytic acid is a concern because this chemical prevents the bioavailability of minerals.

     Materials & Methods

    Based on various studies with the aim of phytic acid reduction, effects of extrusion post process on reducing the phytic acid of pretreated wheat bran via hydrothermal and fermental methods were investigated. To prepare extruded samples, rotating, intermeshing twin-screw extruder with 20 kg/h feeder speed, 300 rpm screw speed, 120 °C temperature and 20% moisture was used.

    Results

    Results showed that the extrusion process decreased phytic acid in raw, fermented and hydrothermal brans at significant levels (p < 0.05). The highest decreases in phytic acid content was observed for the extrusions of fermented (84.84%), hydrothermal (78.3%) and raw (46%) brans. Extrusion process decreased moisture, pH and brightness (L *) and significantly increased ash, crude fiber and redness (a *) of all raw, fermented and hydrothermal bran samples
    (p < 0.05).

    Conclusion

    Results showed that fermented and hydrothermal wheat brans with extrusion post processing might be used in food formulations as rich sources of dietary fibers with less phytic acid, more bioavailability of minerals and longer shelf lives.

    Background and Objectives

    The aim of this study was to assess inhibitory effects of thymol and eugenol against Listeria monocytogenes and Escherichia coli O157:H7 as well as assessing ability of chitosan coating containing thymol and eugenol to control Listeria monocytogenes and Escherichia coli O157:H7 inoculated into chicken fillets over a 12-day storage under cold conditions (4 ºC ±1).

     Materials & Methods

    Antimicrobial activity of the thymol and eugenol against the bacteria was assessed using microdilution and disk diffusion methods. Chitosan coatings with thymol and eugenol were used to inhibit growth of L. monocytogenes and E. coli O157:H7 cocktails inoculated into chicken fillets during storage for 12 days in refrigerator.

    Results

    The MIC of thymol against L. monocytogenes and E. coli O157:H7 included 0.3 and 0.6 mg/ml, respectively, and MBC of this compound included 0.6 and 1.25 mg/ml, respectively. The MIC of eugenol against L. monocytogenes and E. coli O157:H7 respectively included 0.6 and1.25 mg/ml and MBC included 1.25 and 2.5 mg/ml, respectively. Assessment of the combined treatments of thymol and eugenol revealed synergistic activities of these compounds against the highlighted bacteria. The average number of bacteria in treated food samples with enriched chitosan coatings of thymol and eugenol and combinations of the two compounds significantly varied (p < 0.05) during 12 days of storage.

    Conclusion

    Due to the good antimicrobial effects of thymol and eugenol, chitosan coatings enriched with thymol and eugenol and combinations of the two compounds can be used to prevent growth of pathogens on food surfaces, especially chicken meat surfaces, in food industries.

    Background and Objectives

    The aim of this study was to investigate prevalence of Coxiella burnetii in milk samples of dairy cow, sheep and goats using PCR method in Mazandaran Province, Iran.

     Materials & Methods

    From May 2018 to December 2018, a total of 200 raw milk samples of cows, sheep and goats were randomly collected from Mazandaran Province. These samples were tested for Coxiella burnetii using polymerase chain reaction assay with two various primers.

    Results

    In this study, the aim was to investigate the prevalence of Coxiella burnetii using polymerase chain reaction by comparing two types of primers. Using Trans primer, a total of 19 samples [17 sheep milk samples (17.52%) and two cow milk samples (2.70%)] were positive for Coxiella burnetii while none of the goat milk samples were positive. Using the OMP primers, none of the samples were positive and the results showed that the Trans primer included a further ability to detect Coxiella burnetii. Prevalence of Coxiella burnetii was higher in autumn and winter than in other seasons (p < 0.05). The highest frequency of positive samples was linked to Joybar City with eight samples (66.67%) and the lowest frequency was linked to Mahmoud Abad with one sample (11.11%). The number of positive samples detected by Trans primers was 16 (8.60%) in the traditional unit and two (20%) in the semi-industrial unit. However, no positive samples were detected in industrial units. Moreover, the number of positive samples by Trans primers was 12 (12.90%) from the bulk tanks and seven (6.55%) from individual samples. Studying prevalence of contamination and risk factors reveals importance of the infection for health officials.

    Conclusion

    Results of this study showed that Trans- polymerase chain reaction method included a further ability to detect Coxiella burnetii infection. Prevalence of Coxiella burnetii varied in various seasons; hence, prevalence of Coxiella burnetii was higher in autumn and winter than in other seasons. For control and prevention, further studies on epidemiology of Coxiella burnetii from raw milks and prevalence of Q fever in the society are necessary.

    Background and Objectives

    Red meat is susceptible to microbial and chemical spoilages due to its high nutrients and moisture contents. The aim of this study was to investigate effects of edible coating based on Plantago Lanceolata seed mucilage and Sclerorhachis platyrachis essential oil on physicochemical, microbial and sensory characteristics of veal samples during storage at refrigerator (4 °C).

    Materials and Methods

    Concentrations of 0, 0.5, 1 and 1.5% of Sclerorhachis platyrachis essential oil were used to edible coating Plantago Lanceolata seed mucilage. The changes in microbial load (total viable count, psychrotrophic count, Escherichia coli, Staphylococcus aureus and fungi), physicochemical (pH, moisture content, peroxide value, thiobarbituric acid and texture) and sensorial (color, odor and total acceptability) characteristics of the veal samples were assessed during six (0, 2, 4 and 6) days of storage.

    Results

    With increasing concentration of essential oil in the coated samples, peroxide value, thiobarbiotic acid, total viable count, psychrotrophic count, Escherichia coli, Staphylococcus aureus and fungi increased with a gentler slope, compared to the control sample. Over time, hardness, moisture content and sensory attributes (color, odor and total acceptability) of all samples decreased. However, these parameters were lower in coated samples containing Sclerorhachis platyrachis essential oil than the control sample. Regarding microbiology, cold storage times for the control, coated sample without the essential oil and coated samples containing 0.5, 1, 1.5 and 2% essential oil were 2, 4, 4, 6 and 6 days, respectively.

    Conclusion

    The edible coating of Plantago Lanceolata seed mucilage containing Sclerorhachis platyrachis essential oil conferred good quality characteristics to the veal samples and extended their refrigeration shelf lives.

    During the last decade, the consumption of dairy products in Iranian households has been decreased and has reached about 164 grams per day, which is a long way from the recommendations of the "Iranian desirable food basket" to consume 250 grams of dairy products per day. A range of different factors such as food supply, food accessibility and food choices affect the consumption of milk and dairy products, and these factors in turn are affected by the policies adopted in the production, processing, distribution and consumption of these products. In the present scoping review study, the policies of production, processing, distribution and consumption of milk and dairy products, in Iran as well as many other countries, were searched using appropriate keywords. Production policies were classified into five categories of risk management policies and tools, including non-price and price protection policy tools, reducing the cost of capital and inputs, supporting domestic market prices, direct payments to farmers, and improving the business environment for agriculture. Consumption policies were also classified into five categories: policies affecting prices, food aid programs, food preparation and delivery, food promotion programs, and food labeling, and the effectiveness of each policy based on existing studies were reviewed. Then, according to the identified problems and the effectiveness of different policies and study findings, a set of effective policies on improving the per capita consumption of milk and dairy products was proposed.
